Center splits a finished stereo file into its phantom centre and its sides, then lets you set the level of each independently. That is what makes it useful on material whose multitracks are long gone. A lead vocal can be brought up or pushed back, an image widened or narrowed, mud reduced, or bus effects rebalanced, all after the fact. It reduces mid/side technique to two controls rather than asking you to build the matrix by hand.
